- Mezclar la manteca, blanda, con el azúcar. Agregar las yemas y el huevo, la ralladura, la esencia de vainilla, y el chorrito de leche. Incorporar, de a poco, la harina, el polvo de hornear, la pizca de sal y la Maicena. Formar una masa tierna. Si es necesario, agregar un chorrito más de leche. Va a quedar una masa un poco pegajosa. Envolver en papel film, y llevar a la heladera un buen rato.
- Enmantecar y enharinar bien un molde. En esta oportunidad, yo la hice rectangular. Separar 1/3 parte de la masa para las tiras de la pastafrola.

- Por otro lado, cortar el dulce de batata en cubitos, colocarlos en una cacerolita, con el agua y las 2 cdas de azúcar, y llevar a fuego suave, hasta que se empiece a disolver. Pisarlo con tenedor o con un pisapa. Retirar del fuego, y dejar enfriar.


- Acomodar el dulce sobre la masa.

- Con el pedacito de masa reservada, hacemos tiras de 1, 5 cm de ancho aproximadamente, y las vamos colocando encima del dulce, a lo largo y a lo ancho.


- Llevamos a horno moderado, 30 minutos, o hasta que se empiece a dorar. Si queres, la podes pintar con un huevo batido antes de hornearla. Retirar del horno, espolvorear con coco rallado, y dejar enfriar antes de cortar, así se solidifica el dulce. Si la cortas caliente, el dulce va a chorrear, así que te recomiendo que esperes.
